Maple Fudge Delight
Ingredients:
3 cups granulated sugar
1 cup heavy cream
1 cup pure maple syrup
1/2 cup unsalted butter
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts (optional)
Directions:
Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two opposite sides.
In a large, heavy-bottomed saucepan, combine sugar, heavy cream, maple syrup, butter, and salt.
Place the saucepan over medium heat and stir continuously until the sugar has dissolved and the mixture comes to a boil.
Once boiling, insert a candy thermometer and continue to cook, without stirring, until the temperature reaches 238°F (114°C). This should take about 10 minutes.
Remove the saucepan from the heat and let it sit undisturbed for 5 minutes, until the temperature drops to 110°F (43°C).
Add the vanilla extract and, if using, the chopped walnuts. Beat the mixture with a wooden spoon for about 5 minutes, until it thickens and loses its gloss.
Quickly pour the fudge into the prepared pan and smooth the top with a spatula.
Allow the fudge to set at room temperature for 2-3 hours, or until firm.
Use the parchment paper overhangs to lift the fudge out of the pan and place it on a cutting board. Cut into 1-inch squares.
