Cowboy Meatloaf and Potato Casserole Recipe👇👇

For the Meatloaf:
1 1/2 lbs ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons Worcestershire sauce
For the Potato Casserole:
4 cups potatoes, sliced thin
3/4 cups milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
2 cloves garlic, minced
Salt and pepper to taste
Topping:
1/2 cup shredded cheddar cheese
Crispy fried onions or bacon bits (optional)
👉Directions:
Preparing the Meatloaf: In a bowl, combine ground beef, egg, onion, milk, bread crumbs, Worcestershire sauce, salt, and pepper. Press this mixture into the bottom of a casserole dish, ensuring an even layer.
Potato Layer: In a separate bowl, mix together the sliced potatoes, milk, cream, cheese, garlic, salt, and pepper. Pour this mixture over the meatloaf layer in the casserole dish.
Baking: Preheat oven to 375°F (190°C). Cover the casserole with aluminum foil and bake for about 45 minutes.
Topping: Remove the casserole from the oven, discard the foil, and sprinkle the remaining cheddar cheese on top. If desired, also sprinkle crispy fried onions or bacon bits. Return to the oven and bake for an additional 15-20 minutes or until the cheese is melted and bubbly.
Serving: Allow the casserole to cool for 5-10 minutes before slicing and serving.
