Ingredients:


For the Chicken:


1 whole chicken (about 3-4 lbs) or 3-4 cups shredded rotisserie chicken

8 cups of water or chicken broth

2 cups of diced carrots

1 cup of diced celery

1 large onion, diced

3 garlic cloves, minced

1 bay leaf

Salt and pepper to taste

2 tablespoons of butter or oil

For the Dumplings:


2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

2 tablespoons melted butter

Cook the Chicken: In a large pot, heat butter or oil. Add the onions, carrots, and celery, and sautΓ© until onions are translucent. Add garlic and sautΓ© for another minute. If using a whole chicken, place it in the pot and cover with water or broth. Add the bay leaf, salt, and pepper. Bring to a boil, reduce heat and simmer for about 1-1.5 hours until the chicken is cooked through. If using rotisserie chicken, just add it shredded with the broth and bring to a simmer.


Prepare the Dumplings: While the chicken is cooking, mix together the flour, baking powder, and salt in a bowl. Add in the milk and melted butter, stirring just until combined.


Shred the Chicken: Once cooked, remove the chicken from the pot and shred the meat, discarding the skin and bones. Return the shredded chicken to the pot.


Add Dumplings: Drop spoonfuls of the dumpling dough into the simmering chicken and broth. Cover and simmer for about 15-20 minutes. The dumplings should be puffy and float to the top when they are cooked through.


Serve: Season with additional salt and pepper if needed. Serve hot in individual bowls, ensuring each serving has chicken, dumplings, and plenty of broth.
