🥕🍰 Delight in the classic and flavorful Carrot Cake! 🥕🍰


Ingredients:

For the Carrot Cake:

- 2 cups all-purpose flour 🌾

- 2 cups granulated sugar 🍚

- 1 tsp baking powder 🧂

- 1/2 tsp baking soda 🧂

- 1/2 tsp salt 🧂

- 1 tsp ground cinnamon 🌿

- 1/2 tsp ground nutmeg (optional) 🌰

- 1/2 cup vegetable oil 🥕

- 4 large eggs 🥚

- 2 cups grated carrots 🥕

- 1/2 cup crushed pineapple, drained 🍍

- 1/2 cup sweetened shredded coconut 🥥

- 1/2 cup chopped walnuts or pecans (optional) 🌰


For the Cream Cheese Frosting:

- 8 oz cream cheese, softened 🧀

- 1/2 cup unsalted butter, softened 🧈

- 4 cups powdered sugar 🍚

- 1 tsp vanilla extract 🌼


Instructions:

1️⃣ Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2️⃣ In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

3️⃣ Add the vegetable oil and eggs to the dry ingredients. Mix until well combined.

4️⃣ Fold in the grated carrots, crushed pineapple, shredded coconut, and chopped walnuts or pecans, if using.

5️⃣ Divide the batter equally between the prepared cake pans.

6️⃣ Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.

7️⃣ Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then transfer them to a wire rack to cool completely.


For the Cream Cheese Frosting:

1️⃣ In a mixing bowl, beat the softened cream cheese and unsalted butter until smooth and creamy.

2️⃣ Gradually add the powdered sugar, one cup at a time, mixing well after each addition.

3️⃣ Stir in the vanilla extract and beat until the frosting is light and fluffy.
